Feast on freekeh, a flavorful, high-fiber whole grain food made using the traditional roasting method. The subtle smoky flavor and pleasant chewy texture make cracked freekeh ideal for savory salads, spice pilafs and hearty hot cereal.
My lifelong fascination with whole grains has taken me to the far reaches of the globe. On these journeys I have discovered many delicious treasures, grains that nourished the world's greatest ancient civilizations. I just knew i needed to bring these nutritious superfoods home with me so I could share their wondrous stories. Like this story of freekeh...
Long ago, two families lived on neighboring farms in a fertile valley. For reasons now lost to the ages, a feud began between them and, in anger, one clan set fire to their neighbor's wheat fields. The entire crop burned, but the farmer did not despair. He carefully gathered the charred grains from the ashes and cooked the roasted green wheat. This providential harvest was not merely edible, it was delicious, and the farmer's family thrived.
