For the Perfect Cup:
Bring fresh water to a boil and pour over a bag of Chinese Breakfast. Steep 4-5 minutes while keeping your balance. Over steeping brings out bitterness from tannin, a natural part of tea. This tea is strong enough to handle milk, yet mild enough to be served alone. For iced tea, steep 2 bags, cool and pour over ice.
