Eden Tamari is the type of soy sauce characterized as wheat free. This sauce is made of whole foods and traditional koji fermentation brewing dating back hundreds of years. Koji inoculated soybeans are aged for two years allowing natural enzymes and patient tending to create Eden Organic Tamari. Originally tamari was the liquid that rose from miso during fermentation. Its flavor reminds one of miso and is much more pronounced than shoyu. In Japan, tamari is used in food manufacturing. Shoyu is used in kitchen prepared food.
