Banana Nut Muffins
Preheat oven to 350°F. Spray a muffin tin or line with paper lines.
Mix together flour, sugar, baking powder, baking soda and salt.
In a smaller bowl, combine banana, egg and butter. Add banana mixture to flour mixture and stir until just combined. Gently fold in walnuts. Do not over-mix.
Portion batter into muffin tin and bake until tops spring back when lightly touched, 25-30 minutes. Makes 12 muffins.
