Low Carb Muffins
Heat oven to 350°F. Lightly coat muffin tins with cooking spray. In a mixing bowl, combine dry ingredients. Make a well in center of dry ingredients and add the eggs, water, oil and vanilla. Mix with fork or whisk until blended, (approx. 1 minute). Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm.
