Lemon Sugar Cookies
Preheat over to 375°F and line two baking sheets with parchment paper. In a small bowl, mix together flour, baking powder, baking soda and salt. Set aside.
In a large bowl, cream together butter and sugar. Add egg and mix well. Mix in vanilla, lemon juice and zest. Add dry ingredients and stir to combine.
Form dough into 2-Tbsp balls. Roll each ball in sparkling sugar and place 2 inches apart on prepared baking sheets. Bake until edges are just golden, about 12 minutes. Let cool on baking sheet for 5 minutes. Move to a cooling rack to cool completely. Makes 24 cookies.
